Vegan And Vegetarian Dishes To Pull In The Crowds From Calder Foods.

Two new Love Fresh vegan and vegetarian dishes from Calder Foods – Barbeque Pulled Jackfruit and Tofu Tinga filling – are sure to impress those keen to cut down on meat as well, making them all round winners on the menu.

The pulled jackfruit in a thick, smoky bbq sauce is a great alternative to pulled pork. Serve it on top of a plant-based burger with spinach and vegan cheese melted over, or fill a crunchy tortilla with jackfruit, couscous, salsa and vegan cheese. You can even use it as a pizza toping, or mix it with sweet potato mash to make potato cakes with a difference. The jackfruit comes in 1kg packs, one per case.

The Tofu Tinga filling, also packed one x 1kg, is shredded tofu with kidney beans and chickpeas in a Mexican-style spicy tinga sauce. Tofu is no longer just a meat substitute for those following a vegan or vegetarian diet, and has gained approval from flexitarians looking for the occasional meat-free meal.

Tofu Tinga makes a spicy filling for a roasted pepper, and is equally tasty on top of a tostada with vegan mayonnaise, diced avocado, chopped tomato and red onion. Fill cannelloni shells with Tofu Tinga then bake covered with spicy tomato sauce and grated Mexican cheese.
