Chef launches ‘create your own’ tasting menu experience to mark restaurant re-opening

To mark the reopening of Rothay Manor in the heart of the Lake District earlier this month, head chef Dan McGeorge, has introduced a create your own tasting menu experience.

During lockdown Dan spent his time sourcing only the finest seasonal ingredients to devise a unique collaboration between his team and his guests, where diners can build their own menu for the evening.

Dan who recently joined the likes of chefs such as Marcus Wareing, Jason Atherton, and Marco Pierre White in being awarded a highly prestigious Acorn award, decided that he wanted to have the opportunity to showcase a different concept to his guests.

Diners at Rothay Manor can now choose either a five-course seasonal menu made up of two starters, two mains and one dessert or a seven-course seasonal menu made up of three starters, two mains and two desserts, or from a selection of vegetarian options in both menu sizes.

The new menu comprises five seasonally-inspired dishes for each course – such as langoustine with carrot, yuzu, timut pepper and shiso, pork fillet, with pork belly, beetroot, crab apple, dandelion and oats and wild strawberry with lemon verbena and pistachio – which will change with each season.

The restaurant’s wine list has also had a further element of intrigue added, with a range of vintages sitting squarely alongside recommended wine matches for each dish.

Tasting menus have been around since the 2000’s but Dan wanted to do something a little different, to turn the experience on its head.

Dan, aware that all too often guests have no choice when it comes to what they eat in a tasting menu format, and understanding that people like choice, wanted to give his diners exactly that. As well as providing guests with the ability to choose what they would like to eat, he also wanted to ensure that he only used the finest available seasonal ingredients, to craft menus that would also combine the perfect balance of flavour, taste, and texture.

There’s an added fringe benefit too in that some of the best ingredients available to him are simply just not available in large quantities, so this option allows him to offer smaller portions to his guests but more courses, which in turn has given him a licence to create some simply show-stopping dishes using some of the rarer ingredients he has selected to sit in his menus.

Dan’s new tasting menu formats are available as either a five-course tasting menu priced at £70 per person or a seven-course tasting menu priced at £90 per person.
